Self taught and well read Marcia has traveled the globe which has excited her interest in the world’s culinary traditions. She has work in the kitchens of Danny Meyer, Diane Foley and helped to open Jefferson in New York City. For the better part of the last twenty years, Marcia has owned restaurants that have incorporated these varying traditions. Presently, as Co-Chef Owner of Sabroso, located in Rhinebeck, New York, Marcia’s concentration is on Iberian, Caribbean and South American Cuisine with Co-Chef owner Erica Mahlkuch. Marcia has published recipes in a variety of books and periodicals and states “cooking to me is like understanding people, it takes love and patience.”
