Sabroso is subtitled "Latin World Cuisine." Why? Marcia Miller, co-chef along with Erica Mahlkuch, explains "It's really the first fusion cuisine. Because the countries were colonized by so many different people, their foods tend to have influences from Asian, Spanish, French, Portuguese, and Italian cuisines."

Much has been written recently about the health benefits of the Mediterranean diet and this cuisine is similar, but with an added kick from chiles and tropical fruit. Marcia says, "Mediterranean food is my passion and I love to work with fish, fuits, seasonal vegetables, good oils-and to play with heat from chiles." I can tell you: the results are exciting.
